Pineapple Pie for Easter and Tea.

Two things I love, make that Three: Spring, Tea parties and Pineapple pie.

Yesterday I started my afternoon with a tea party for two that grew into tea for four (thank goodness I made FOUR scones!

I was thrilled with how all the colors came together including the bouquet from my guest.

Next thing was to get the pie crust made for the ever popular Pineapple pie that I make once a year for Easter. The recipe is so simple and the results...yummy.




I got the recipe from my aunt Janet in 1987 and have been baking the pie ever since.

Janets Pineapple Pie:

20 ounce can crushed Pineapple
1/3 Cup sugar
2 Tablespoons Flour
1 Egg

Mix these all togeter pour them in a pie shell, pop on a pie crust top then pierce top with sharp knife.
Bake at 375 for 35-40 minutes, until edges of shell brown a bit.

That's it!
I like to sprinkle mine with large sugar crystals before baking.

    I have never heard of a pineapple pie before!! I want to learn how to make a pie crust, maybe this will be the incentive I need.
